How to Revive "Chuck"

  1. Add 10g dried starter into a clean jar (I use an 8 once mason jar)
  2. Add 10g lukewarm water into the jar
  3. Mix until milky white
    1. Let sit to help break apart dried pieces  (10-30 minutes)
  4. Once the starter has sat, add 40g of lukewarm water to jar
    1. The total amount of water in the jar should now be 50g
  5. Add 50g of flour and give it a good mix
    1. You are aiming for a thicker pancake consistency
    2. Put lid on lightly (not air tight)
  6. Place jar in a warm area
    1. Place jar on something that will hold warmth (a potholder)
    2. Store remaining dried starter in cabinet, fridge, or freezer
  7. Daily feed - In a different clean jar:
    1. Add 50g lukewarm water
    2. Add 50g flour
    3. Add 10g of previous days starter
    4. Mix
      1. It will take roughly 1-4 days of daily feeds to get the starter nice and active.
      2. Use the same lid, it will help build the wild yeast in the air.
    5. When you see bubbles AND a rise and fall, your starter is ready to make dough
  8. Tips:
    1. I would recommend organic, unbleached all-purpose flour or organic, unbleached bread flour
    2. Always zero the scale before measuring ingredients
    3. Always feed into a clean jar with lid (not air tight)
